Cinnamon bark oil, is produced by steam distillation of Bark from the plant Cinnamomum Zylanicum (Lau-racede). (Lauraceae). Sri Lanka is the traditional producer of the true Cinnamon, also called Ceylon Cin-namon. It is indigenous to Sri Lanka, and growson the southern coastal belt of the Island.
Cinnamon bark contains approximately 41-51% aldehydes. It contains cinamaldehyde or cinnamic aldehyde (an aromatic aldehyde) which gives the flavoring that people love in mints, gums, etc.
