Being the largest fruit on earth, jackfruit is fat-free and a nutritious source of vitamin C and potassium. In Sri Lanka it is used in many ways: as a food staple – an alternative to the main meal, rice and as side dishes, snacks, soups, drinks, salads and a dessert.
This unique vegetable is a good source of vitamin C and A and dietary fibre. It can be used in soups, stir fries, curries and even teas. In traditional Ayurvedic medicine, it is believed to be a “plant-insulin”, useful for non-insulin dependent diabetics and for use as an appetizer, a digestive and an anti-inflammatory agent.
